Spinach Banana Oat Pancakes

It's crazy to think that Taylor is not even 10 months old, but she is already eating like a toddler (and adult portions)!  It's been so much fun exploring new foods with her, but its starting to get harder to come up with new ideas and combinations for her try.  I always try to be conscious of making Taylor's meals as nutritious as possible and offering her a healthy balance of carbs, protein, and healthy fats. 

This is why these Spinach Banana Oat Pancakes are perfect for breakfast. With minimal ingredients and no added refined sugar, this recipe is the perfect way to start your day!

Ingredients:

  • 1 cup Spinach (you can always choose to omit the spinach if you prefer)

  • 1 ripe Banana

  • 1 egg

  • 1/2 cup oats

  • 1 tsp Vanilla (optional)

  • 1 tsp Cinnamon (optional)

Directions:

Slice Banana and add spinach, egg, and oats (also add vanilla & cinnamon at this time) all into a blender.

I prefer to use my Nutribullet Pro over my other mixers or food processor just because it is so convenient and easy. (affiliate) I also use my Nutribullet EVERY SINGLE DAY for Tay's smoothies as well. It's pretty much my favorite kitchen appliance. I own both the Nutribullet and the Nutribullet Pro . Both work well, but the Nutribullet Pro is a larger version of the 600 with 50% more power thanks to the 900 watt motor (compared to the 600 watts). It also comes with a slightly larger blending cup (32 ounce vs 24 ounce). Both the 600 and 900 variants have exactly the same blade and result should be just the same, but I also love the color of the pro, lol.)

Once everything is blended and emulsified, add one TBSP of mixture onto a well-greased pan (Coconut oil or butter) over medium heat.

After about a minute, flip to make sure both sides are evenly cooked. Remove from heat and let pancakes cool and serve. If you want to make your baby's meal a bit more festive, you can use the Cookie Cutters to punch out fun shapes for your little one. I got these from Amazon and they are perfect for keeping Tay entertained and they make the most adorable bite-size shapes that are perfectly sized for her little fingers to pick up! (affiliate)
