Spicy Stir Fried Squid

Ojingeo Bokkeum | 오징어볶음

Everyone knows that when it comes to a fresh and easy meal, nothing beats a quick stir fry. One dish that I can whip up anytime is Ojingeo Bokkeum. “Ojingeo” (오징어) means squid and “bokkeum” (볶음) means stir fried. Add a little sweet and spicy pepper flake seasoning and you have a delicious dish that looks like you spent some serious time in the kitchen.

Ingredients:

  • 1 pound of squid cleaned
  • 12 green onions cut 2” long
  • 2 korean peppers sliced
  • 1 medium onion sliced
  • 1/4 small green cabbage sliced
  • 1 medium carrot sliced into thin strips
  • 1/4 cup water

For seasoning paste:

  • 1 tablespoon minced garlic
  • 1 teaspoon minced ginger
  • 3 tablespoons soy sauce
  • 2 tablespoons gochugaru (hot pepper flakes)
  • 2 tablespoon gochujang (hot pepper paste)
  • 1/2 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1 tablespoon honey

Directions: 

1. Wash and slice carrots, onions, green onions. peppers and cabbage.

2. In a mixing bowl, combine the gochujang, gochugaru, soy sauce, ginger, garlic, honey, sugar and sesame oil to create a paste. (Set aside)

3. If you’re using a whole squid, rinse and clean the squid (I always prefer fresh whole squid if available, but you can also use frozen or packaged squid).

4. Take a pair of kitchen shears and cut down the middle of the entire back of the squid. Separate the legs from the head of the squid. Remove the bone that runs along the middle of the back along with all of the innards of the squid. Discard head, bones and innards. Once cleaned and deboned, cut the squid flesh and legs into bite size pieces.

5. Combine cut squid into the mixing bowl with seasoned paste. Let marinate for 15 minutes.

6. In a large skillet, heat 1 tablespoon of sesame oil over medium heat. Add carrots and onions and sauté until carrots are softened and onions become slightly translucent. Add cabbage, green peppers and stir fry for one minute.

8. Add seasoned squid mixture and stir fry until squid becomes white. Add 1/4 cup water and cook on high heat.

9. Reduce heat, add green onions and simmer for additional minute.

10. Garnish with toasted sesame seeds and serve.

You can top the Ojingeo Bokkeum over rice or you can serve with somyeon (wheat flour noodles) for an extra treat!
