Tofu with Stir Fried Pork Belly & Kimchi
Kimchi goes with just about EVERYTHING, but something about Pork makes them the perfect comfort food duo. Kimchi Jjigae of course is one of those dishes that I’m speaking of, but another also happens to be one of my favorite Korean Bar foods— Tofu with Stir Fried Pork Belly & Kimchi.
Ingredients:
2 cups fully fermented kimchi
1/2 cup of kimchi brine
1 package of 18 oz tofu
1 TBSP sesame oil
1/2 lb sliced pork belly
1 TBSP gochujang chili pepper paste
1 TBSP sugar
1 tsp toasted sesame seeds
1 thinly sliced scallion
1/4 cup water
Directions:
Cut Kimchi into bite size pieces and add to a large pan along with kimchi brine and sesame oil.
Slice pork into thin pieces
Add pork , chili pepper paste and sugar and mix together over medium/high heat.
Once meat is fully cooked, add 1/4 cup of water and cook until liquid evaporates and kimchi is softened.
Place Tofu in a linen cloth and add to boiling water for 3-5 minutes.
Remove tofu from heat and slice.
Plate tofu and add kimchi and pork. Top with scallions and toasted sesame seeds.
